Method
- In a bowl, combine besan, turmeric, red chilli powder, asafoetida (if using) and salt. Mix well. Add chopped onion, tomato, green chilli and coriander leaves. Gradually add water and whisk to a smooth thick batter — not runny. Batter should coat bread slices evenly.
- Heat the tawa (or frying pan) over medium heat and add a little oil or ghee to coat.
- Take one bread slice, dip one side into the batter, coat evenly without soaking too long (to prevent sogginess). Place the batter-coated side down on hot tawa.
- When the base is set and begins to lift easily from the tawa, carefully spoon some batter on the top side, then flip the toast.
- Drizzle a little oil or ghee if needed. Cook on low to medium flame until both sides turn golden-brown and crisp. Repeat for remaining slices.
- Serve hot immediately with green chutney, tomato ketchup or your favourite spread.
Notes
For a crispier toast, you may add 1 tsp rice flour or semolina (sooji) to the batter. Use finely chopped vegetables so that the coating stays even. Serve immediately — toast tends to become soggy if kept for long.
