
Muesli Banana Waffles
Easy Indian-style muesli banana waffles — wholesome, fibre-rich and perfect for a healthy vegetarian breakfast or snack.

- Peel and mash the ripe banana in a mixing bowl until smooth (with a fork or masher).
- Add milk and half the oil, then whisk together until banana and milk are well combined.
- In another bowl, mix rolled oats (or coarse muesli), whole wheat flour, baking powder, cinnamon and a pinch of salt.
- Pour the wet banana-milk mixture into the dry ingredients. Stir gently until you get a thick but pourable batter. If too thick, add a splash of milk.
- Preheat the waffle iron and brush lightly with oil to prevent sticking.
- Pour about ½ cup batter onto the hot waffle iron, close the lid and cook for 4–6 minutes or until the waffle turns golden and crisp.
- Carefully remove the waffle and repeat with remaining batter. Serve warm with fresh fruit, a drizzle of honey or your favourite chutney / jam.
Notes
You can crush the oats coarsely if you like some texture in the waffle. Use plant-based milk and oil to make it vegan. Fresh banana gives natural sweetness — no sugar needed.
