Muesli Banana Waffles

  • 1 cup rolled oats / muesli you can grind into coarse flour or use directly
  • ½ cup whole wheat flour
  • 1 ripe banana medium, mashed
  • ½ cup milk use regular or plant-based milk
  • 1 tsp baking powder
  • ¼ tsp cinnamon powder optional, for flavour
  • 1 tbsp oil (vegetable / melted coconut oil) for batter + greasing waffle iron
  • pinch salt

Method
 

  1. Peel and mash the ripe banana in a mixing bowl until smooth (with a fork or masher).
  2. Add milk and half the oil, then whisk together until banana and milk are well combined.
  3. In another bowl, mix rolled oats (or coarse muesli), whole wheat flour, baking powder, cinnamon and a pinch of salt.
  4. Pour the wet banana-milk mixture into the dry ingredients. Stir gently until you get a thick but pourable batter. If too thick, add a splash of milk.
  5. Preheat the waffle iron and brush lightly with oil to prevent sticking.
  6. Pour about ½ cup batter onto the hot waffle iron, close the lid and cook for 4–6 minutes or until the waffle turns golden and crisp.
  7. Carefully remove the waffle and repeat with remaining batter. Serve warm with fresh fruit, a drizzle of honey or your favourite chutney / jam.

Notes

You can crush the oats coarsely if you like some texture in the waffle. Use plant-based milk and oil to make it vegan. Fresh banana gives natural sweetness — no sugar needed.
