
Quinoa Veg Soup (Bolivian Style Stew)
A nourishing Indian-style quinoa vegetable soup inspired by Bolivian stew, packed with fibre, protein, and gentle flavours.

- Heat oil in a pan and sauté onions and garlic until they turn soft.
- Add tomatoes and cook until they soften.
- Mix in turmeric and cumin powder. Stir for a few seconds to release the aroma.
- Add mixed vegetables and quinoa. Stir well.
- Pour in water or broth. Add salt and pepper.
- Cover and cook on low flame for 20 to 25 minutes until quinoa becomes soft and vegetables are tender.
- Serve hot with fresh coriander or a squeeze of lemon.
Notes
Use vegetable broth for deeper flavour. Add chilli flakes for heat. Ideal for weight loss, digestion and immunity support.
