Mexican Corn Salsa (Indian Healthy Version)

  • 1 cup Sweet corn kernels fresh or frozen
  • 1/2 cup Tomato, finely chopped
  • 1/4 cup Onion, finely chopped preferably red onion
  • 1/4 cup Capsicum, chopped any colour
  • 1 Green chilli, finely chopped adjust to taste
  • 2 tbsp Fresh coriander, chopped
  • 1 tbsp Lemon juice freshly squeezed
  • 1/2 tsp Black salt or regular salt adjust to taste
  • 1/2 tsp Roasted cumin powder

Equipment

  • Mixing bowl
  • Saucepan
  • strainer

Method
 

  1. Boil the sweet corn for 2 minutes or until soft. Drain and let it cool.
  2. Add corn, tomatoes, onions, capsicum and green chilli to a mixing bowl.
  3. Sprinkle salt and roasted cumin powder. Mix gently.
  4. Add lemon juice and coriander. Toss everything well.
  5. Serve fresh as a snack, salad or taco topping.

Notes

For extra flavour, add a pinch of chaat masala or smoked paprika. Tastes best when served immediately.
