  • 2 cups phool makhana (fox nuts / lotus seeds)
  • 1 tsp olive oil (or light oil / ghee) optional — for light roasting and crispiness
  • ¼ tsp salt or to taste
  • ¼ tsp black pepper powder or red chili powder if you prefer some heat

Method
 

  1. Heat a non-stick pan on medium flame. Add the olive oil (or ghee) and swirl to coat the base of the pan.
  2. Add the phool makhana (fox nuts) to the pan. Stir gently to coat makhana with oil evenly.
  3. Roast the makhana on medium flame, stirring continuously so that they puff up evenly and don’t burn. This should take about 5 to 7 minutes. You will hear light pops or see slight puffing.
  4. Once puffed and crisp, lower the flame. Sprinkle salt and black pepper (or red chili powder) over the hot makhana. Toss well so seasoning coats each piece.
  5. Turn off heat. Let the roasted makhana cool completely — this helps maintain crispiness.
  6. Serve in a bowl as a healthy, crunchy snack. Store any leftovers in an airtight container once fully cooled.

Notes

You can customise spice levels — add a pinch of chaat masala, turmeric or red chili for variety. For a lighter snack, skip oil and dry-roast. Always cool completely before storing to retain crunch.
