Homemade Indian-style Tomato Sauce

  • 6 medium ripe tomatoes washed and chopped
  • 2 cloves garlic finely chopped
  • 1 tsp olive oil (or any light cooking oil)
  • ¼ tsp cumin powder optional, adds mild Indian flavor
  • black pepper a pinch or to taste
  • salt to taste

Method
 

  1. Wash and chop the tomatoes roughly. Blanch in hot water if you prefer removing skin (boil 3-4 min, then cool and peel).
  2. In a blender, puree the chopped (or peeled) tomatoes to a smooth or slightly coarse consistency, as desired.
  3. Heat oil in a saucepan on medium flame. Add chopped garlic and sauté lightly until it becomes fragrant (about 30 seconds to 1 minute).
  4. Pour the tomato puree into the pan. Mix well and bring to a gentle simmer.
  5. Add cumin powder (if using), a pinch of black pepper and salt to taste. Stir and cook on low-medium flame until sauce thickens (about 15–20 minutes).
  6. Taste and adjust salt or pepper if needed. Once the sauce reaches a spreadable or pourable thick consistency, turn off the heat and let it cool slightly before storing.

Notes

Use ripe, red tomatoes for the best natural sweetness. You can skip cumin if you prefer plain sauce. Store cooled sauce in a clean airtight jar. In fridge, use within 5-7 days. For longer storage, freeze in small portions.
