  • 1/2 cup yellow moong dal (split moong) washed and drained
  • 2 cups water
  • 1/4 tsp turmeric powder optional but good for flavour & colour
  • 1/4 tsp salt or to taste
  • 1/2 tsp ghee or oil for tempering
  • 1/4 tsp cumin seeds for tempering
  • 1 pinch asafoetida (hing) optional, improves digestion
  • Fresh coriander leaves finely chopped, for garnish

Method
 

  1. Wash the moong dal well under running water until water runs clear.
  2. In a saucepan, combine the washed dal, water, turmeric powder and salt. Bring to a boil, then simmer on low heat until dal becomes soft and mushy (about 15-20 minutes). Stir occasionally.
  3. Once the dal is soft, use a spoon or whisk to lightly mash it so it becomes smooth and soup-like. Adjust thickness by adding a little more water if needed.
  4. In a small pan, heat ghee (or oil). Add cumin seeds and asafoetida. When cumin starts crackling, pour this tempering over the soup.
  5. Stir well. Pour soup into bowls, garnish with chopped coriander leaves. Serve hot.

Notes

You can add a squeeze of lemon juice or a pinch of pepper for extra flavour. For added nutrition, gently stir in chopped spinach or grated carrot while cooking dal.
