
Easy Indian Mushroom Salad
A light, healthy and vegetarian Indian-style mushroom salad with fresh veggies and tangy lemon dressing — perfect as a quick, weight-friendly meal.

- Clean mushrooms with a damp cloth, slice them thinly and keep in a bowl.
- Dice cucumber and tomato, finely chop red onion. Add all to the bowl with mushrooms.
- In a small bowl, mix yogurt, lemon juice, olive oil (if using), salt and freshly ground black pepper to make dressing.
- Pour the dressing over the vegetables and mushrooms. Toss gently to make sure everything is coated.
- Finally, sprinkle chopped coriander leaves on top and give a final light toss. Serve fresh.
Notes
Use fresh firm mushrooms. Do not over-soak them in water. This salad is best eaten fresh to retain crunch. You can add other seasonal veggies like grated carrot or bell pepper for variety.
