  • 200 grams fresh mushrooms (button / white or cremini) cleaned and sliced
  • 1 cup chopped cucumber diced
  • 1/2 cup chopped tomato deseeded if you like
  • 1/4 cup finely chopped red onion
  • 2 tbsp plain low-fat yogurt or hung curd for thicker consistency
  • 1 tbsp fresh lemon juice
  • 1 tsp olive oil optional, for flavour
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper powder freshly ground
  • 1 tbsp fresh coriander leaves chopped, for garnish

Method
 

  1. Clean mushrooms with a damp cloth, slice them thinly and keep in a bowl.
  2. Dice cucumber and tomato, finely chop red onion. Add all to the bowl with mushrooms.
  3. In a small bowl, mix yogurt, lemon juice, olive oil (if using), salt and freshly ground black pepper to make dressing.
  4. Pour the dressing over the vegetables and mushrooms. Toss gently to make sure everything is coated.
  5. Finally, sprinkle chopped coriander leaves on top and give a final light toss. Serve fresh.

Notes

Use fresh firm mushrooms. Do not over-soak them in water. This salad is best eaten fresh to retain crunch. You can add other seasonal veggies like grated carrot or bell pepper for variety.
