Sprouted Lentil (Moong) Salad

  • 2 cups sprouted green-gram (moong) beans washed and drained
  • ¼ cup onion finely chopped
  • cup tomato finely chopped
  • cup cucumber finely chopped (optional)
  • 1 green chilli finely chopped, optional
  • 1 tbsp fresh coriander leaves chopped
  • 1 tbsp lemon juice freshly squeezed
  • ¼ tsp red chilli powder or paprika / cayenne (optional)
  • ½ tsp chaat masala optional for Indian tangy flavour
  • salt or black salt to taste
  • 2 tbsp roasted peanuts optional, for crunch

Method
 

  1. Rinse sprouted moong beans thoroughly and drain all water.
  2. If you prefer, steam or boil the sprouts for 4-5 minutes until they are softened but still slightly crunchy. Drain and let them cool.
  3. In a large mixing bowl add the cooled sprouts, chopped onion, tomato and cucumber (if using).
  4. Add chopped green chilli (if using), chopped coriander leaves and roasted peanuts.
  5. Sprinkle red chilli powder, chaat masala, salt to taste and pour in lemon juice.
  6. Mix everything gently but thoroughly so all ingredients combine well.
  7. Taste and adjust salt or lemon juice if needed. Serve immediately.

Notes

You can skip cucumber or peanuts if unavailable. For extra crunch or variety, add grated carrot, chopped bell-pepper or pomegranate seeds. Use fresh sprouts; avoid if they smell sour or slimy. Salad is best consumed fresh instead of storing for long.
