
Sprouted Lentil (Moong) Salad
A quick, protein-rich Indian sprouted lentil salad with fresh veggies, mild spices and lemon — ideal as a healthy snack or light meal.

- Rinse sprouted moong beans thoroughly and drain all water.
- If you prefer, steam or boil the sprouts for 4-5 minutes until they are softened but still slightly crunchy. Drain and let them cool.
- In a large mixing bowl add the cooled sprouts, chopped onion, tomato and cucumber (if using).
- Add chopped green chilli (if using), chopped coriander leaves and roasted peanuts.
- Sprinkle red chilli powder, chaat masala, salt to taste and pour in lemon juice.
- Mix everything gently but thoroughly so all ingredients combine well.
- Taste and adjust salt or lemon juice if needed. Serve immediately.
Notes
You can skip cucumber or peanuts if unavailable. For extra crunch or variety, add grated carrot, chopped bell-pepper or pomegranate seeds. Use fresh sprouts; avoid if they smell sour or slimy. Salad is best consumed fresh instead of storing for long.
