Healthy Indian-Style Grilled Chicken Salad

  • 2 skinless boneless chicken breasts Chicken breasts about 250 g total, trimmed of fat
  • 1 tbsp Olive oil for grilling
  • 1 tsp Ground coriander powder
  • 1 tsp Ground cumin powder
  • Salt and freshly ground black pepper to taste
  • 4 cups Mixed salad greens lettuce, spinach or rocket (arugula)
  • 1 cup Cucumber thinly sliced or chopped
  • 1 cup Tomatoes chopped or diced (use cherry tomatoes halved if available)
  • 1 Red onion thinly sliced, about ¼ onion
  • 1 Avocado (optional) sliced, for healthy fats
  • 2 tbsp Olive oil for dressing
  • 1 tbsp Lemon juice freshly squeezed
  • Salt and pepper for dressing to taste

Method
 

  1. Wash and pat dry the chicken breasts. Rub them with 1 tbsp olive oil, coriander powder, cumin powder, salt and pepper on both sides.
  2. Heat a grill pan or heavy skillet on medium-high heat. Place the chicken and grill about 6–7 minutes on each side until fully cooked and slightly charred. Internal meat should not have pink inside.
  3. Remove chicken from heat and let it rest for 5 minutes, then slice thinly.
  4. In a large bowl, mix salad greens, cucumber, tomatoes, red onion and optional avocado slices.
  5. In a small bowl, whisk together 2 tbsp olive oil, lemon juice, salt and pepper — this is your simple dressing.
  6. Place the sliced grilled chicken on top of the salad. Drizzle the dressing over the salad. Toss gently or serve as arranged.
  7. Serve immediately while chicken is warm, or refrigerate for a chilled salad later.

Notes

You can add chopped bell peppers or carrots for more crunch and colour. For more flavour, sprinkle a pinch of chaat masala or chatpata Indian spice mix over the salad before serving.
