
Healthy Indian-Style Grilled Chicken Salad
A simple, healthy grilled chicken salad with Indian-inspired spices and fresh vegetables — perfect for a light lunch or dinner.

- Wash and pat dry the chicken breasts. Rub them with 1 tbsp olive oil, coriander powder, cumin powder, salt and pepper on both sides.
- Heat a grill pan or heavy skillet on medium-high heat. Place the chicken and grill about 6–7 minutes on each side until fully cooked and slightly charred. Internal meat should not have pink inside.
- Remove chicken from heat and let it rest for 5 minutes, then slice thinly.
- In a large bowl, mix salad greens, cucumber, tomatoes, red onion and optional avocado slices.
- In a small bowl, whisk together 2 tbsp olive oil, lemon juice, salt and pepper — this is your simple dressing.
- Place the sliced grilled chicken on top of the salad. Drizzle the dressing over the salad. Toss gently or serve as arranged.
- Serve immediately while chicken is warm, or refrigerate for a chilled salad later.
Notes
You can add chopped bell peppers or carrots for more crunch and colour. For more flavour, sprinkle a pinch of chaat masala or chatpata Indian spice mix over the salad before serving.
