Healthy Indian Pumpkin Chaat

  • 250 g pumpkin (kaddu), peeled and cubed
  • 1 tbsp oil (preferably olive or mustard oil)
  • ½ tsp cumin seeds (jeera)
  • ¼ tsp turmeric powder (haldi)
  • ¼ tsp red chilli powder (adjust to taste)
  • ¼ tsp chaat masala
  • 1 tbsp lemon juice
  • 2 tbsp fresh coriander leaves, chopped
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • salt, to taste

Method
 

  1. Heat oil in a pan. When hot, add cumin seeds and let them splutter.
  2. Add the cubed pumpkin and stir-fry on medium heat for about 2 minutes so oil coats all pieces.
  3. Sprinkle turmeric and red chilli powder, mix well and cook for 5–7 minutes, stirring occasionally, until pumpkin becomes just soft but not mushy.
  4. Turn off heat. Transfer pumpkin to a mixing bowl and let it cool slightly.
  5. Add chopped onion, tomato, coriander leaves, lemon juice, chaat masala and salt. Mix gently to combine.
  6. Taste and adjust seasoning if needed. Serve immediately as a light, healthy chaat.

Notes

You can add finely chopped green chillies or a dash of crushed black salt for extra tang. Best served fresh. For a crunchy twist, top with roasted peanuts or pomegranate seeds.
