
Healthy Indian Pumpkin Chaat
A simple, healthy Indian pumpkin chaat that’s quick to prepare and full of fresh flavours — perfect as a light snack or side dish.

Method
- Heat oil in a pan. When hot, add cumin seeds and let them splutter.
- Add the cubed pumpkin and stir-fry on medium heat for about 2 minutes so oil coats all pieces.
- Sprinkle turmeric and red chilli powder, mix well and cook for 5–7 minutes, stirring occasionally, until pumpkin becomes just soft but not mushy.
- Turn off heat. Transfer pumpkin to a mixing bowl and let it cool slightly.
- Add chopped onion, tomato, coriander leaves, lemon juice, chaat masala and salt. Mix gently to combine.
- Taste and adjust seasoning if needed. Serve immediately as a light, healthy chaat.
Notes
You can add finely chopped green chillies or a dash of crushed black salt for extra tang. Best served fresh. For a crunchy twist, top with roasted peanuts or pomegranate seeds.
