Spinach & Jowar Paratha

  • 1 cup jowar flour
  • 1 cup finely chopped spinach fresh
  • 2 tbsp besan helps binding
  • 1 tsp ginger paste
  • 1 tsp green chilli paste
  • 1/2 tsp turmeric powder
  • 1/2 tsp jeera
  • 1/2 tsp salt adjust to taste
  • 1-2 tbsp oil for cooking
  • as needed warm water to form dough

Method
 

  1. Add jowar flour, spinach, besan, ginger paste, green chilli paste, jeera, turmeric, and salt to a mixing bowl.
  2. Slowly add warm water and knead into a soft dough. Jowar dough may feel slightly crumbly, so keep pressing with your palms.
  3. Divide the dough into four equal balls.
  4. Dust a little jowar flour and gently roll each ball into a medium-thick paratha. If it cracks, press the edges and roll again.
  5. Heat a tawa on medium flame. Place the paratha and cook until light brown spots appear.
  6. Flip, drizzle a little oil, and cook both sides until fully done. Repeat for all parathas.

Notes

Serve these parathas hot with curd, chutney, or dal. Jowar makes the paratha gluten-free and gut-friendly, while spinach adds iron and antioxidants.
