Gobhi Paratha

  • 1 cup whole wheat flour for dough
  • 1.5 cups grated cauliflower squeeze out excess water
  • 2 tbsp finely chopped coriander
  • 1 tsp green chilli, finely chopped
  • 1/2 tsp ginger, grated
  • 1/2 tsp cumin powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder adjust to taste
  • 1/2 tsp garam masala
  • to taste salt
  • 1 tbsp oil for dough + cooking

Method
 

  1. Add whole wheat flour, a pinch of salt, and a little water in a bowl. Knead into a soft dough. Rest for 10 minutes.
  2. Mix grated cauliflower, coriander, green chilli, ginger, cumin powder, turmeric, red chilli powder, garam masala, and salt in another bowl.
  3. Divide the dough into equal balls. Roll one ball slightly, place 2 to 3 tbsp cauliflower filling in the center, and seal the edges.
  4. Roll the stuffed dough gently into a paratha, dusting with flour as needed.
  5. Heat a tawa and cook the paratha on both sides until golden brown. Drizzle a little oil while roasting.
  6. Serve hot with curd, pickle, or chutney for a complete healthy meal.

Notes

For best results, squeeze cauliflower well so the stuffing stays dry and easy to roll. Add spices based on your taste.
