  • 1 medium brinjal (baingan) round variety preferred
  • 1 cup curd (thick dahi) use fresh curd
  • 1 tbsp oil
  • 1/2 tsp jeera (cumin) for tempering
  • 1 tsp finely chopped green chilli optional
  • 2 tbsp finely chopped coriander
  • 1/4 tsp red chilli powder
  • 1/4 tsp roasted jeera powder
  • to taste salt

Equipment

  • Mixing bowl
  • Tawa or Pan
  • Spatula

Method
 

  1. Wash the brinjal and cut it into small cubes.
  2. Heat oil in a pan and add cumin seeds. Let them splutter.
  3. Add brinjal pieces and cook on medium heat until soft and lightly browned.
  4. Let the cooked brinjal cool completely.
  5. Whisk curd in a bowl until smooth.
  6. Add cooled brinjal, green chilli, coriander, chilli powder, roasted jeera powder, and salt. Mix well.
  7. Keep the raita in the fridge for 15 minutes for better flavour.

Notes

For extra flavour, you can roast the brinjal directly on flame, mash it, and mix it into the curd.
