  • 2 slices whole wheat bread
  • 2 tbsp green chutney homemade or store-bought
  • 3-4 slices cucumber
  • 3-4 slices tomato
  • 2-3 tbsp grated carrot
  • 2 tbsp capsicum finely chopped
  • 1 tsp butter optional
  • 1 pinch black pepper
  • Salt to taste

Equipment

  • Tawa or sandwich toaster

Method
 

  1. Spread green chutney evenly on both slices of whole wheat bread.
  2. Place cucumber, tomato, grated carrot and chopped capsicum evenly on one slice.
  3. Sprinkle a little salt and black pepper over the vegetables.
  4. Close the sandwich with the second slice of bread.
  5. Lightly spread butter on the outer sides and toast on a tawa or sandwich toaster for 2 to 3 minutes until golden.
  6. Slice and serve warm.

Notes

You can add beetroot, lettuce or paneer for extra nutrition. Use multigrain bread for more fiber.
