Spinach Hummus

  • 1.5 cups boiled chickpeas soft cooked
  • 1 cup fresh spinach leaves washed
  • 2 tbsp sesame seeds lightly roasted
  • 2 tbsp olive oil
  • 3 tbsp lemon juice fresh
  • 3 cloves garlic
  • 1/2 tsp roasted cumin powder
  • 1/4 tsp black pepper freshly ground
  • 1/2 tsp salt adjust to taste
  • 3–4 tbsp water as needed for blending

Method
 

  1. Add boiled chickpeas, spinach, sesame seeds, garlic, lemon juice, cumin, black pepper, and salt to a mixer.
  2. Pour in olive oil and 2 tablespoons of water. Start blending.
  3. Scrape the sides and add more water as needed to get a smooth, creamy texture.
  4. Taste and adjust lemon, salt, and pepper. Blend again for 10 seconds.
  5. Transfer to a bowl and drizzle a little olive oil on top. Serve with veggies, roti chips, or use as a spread.

Notes

You can replace sesame seeds with 1 tbsp peanut butter for a budget-friendly version. Store in the fridge for 2–3 days.
