
Quinoa Kheer
Quinoa kheer is a healthy, protein-rich Indian dessert made with quinoa, milk, cardamom, and nuts. Perfect for festive treats or guilt-free sweet cravings.

- Rinse quinoa under running water and strain well to remove bitterness.
- Heat ghee in a small pan and lightly roast almonds and cashews. Keep aside.
- In a saucepan, add rinsed quinoa and 1 cup water. Cook on medium heat for about 10 minutes until quinoa softens.
- Once quinoa is cooked, add milk and stir well. Let it simmer for 10–12 minutes until the kheer thickens.
- Add jaggery powder and stir continuously. Cook for 2–3 minutes.
- Add cardamom powder and roasted nuts. Mix and turn off the heat.
- Serve warm or chilled.
Notes
You can use coconut milk for a dairy-free version. Adjust jaggery as per sweetness preference. The kheer thickens on cooling, so add a splash of milk before serving if needed.
