
Pumpkin Kheer
Pumpkin kheer is a light, creamy, Indian dessert made with pumpkin, milk, and jaggery. It’s healthy, easy to cook, and perfect for festive days.

- Add pumpkin pieces to a pan with a little water and cook until soft.
- Blend the cooked pumpkin into a smooth puree.
- Heat ghee in a pan and fry cashews and raisins until golden. Keep aside.
- Pour milk into the same pan and bring it to a light boil.
- Add the pumpkin puree and mix well. Cook for 5 to 7 minutes on low flame.
- Add jaggery powder and stir until fully dissolved. Do not boil after adding jaggery.
- Mix in cardamom powder and add the fried dry fruits.
- Serve warm or chilled.
Notes
Use ripe yellow pumpkin for natural sweetness. Adjust jaggery based on taste. For a richer texture, add 2 tbsp coconut milk at the end.
