  • 2 cups grated lauki (bottle gourd) peeled and seeds removed
  • 1 cup milk
  • 1/3 cup jaggery powder adjust to taste
  • 1.5 tbsp ghee
  • 1/4 tsp cardamom powder
  • 2 tbsp chopped nuts (almonds, pistachios) for garnish

  • kadai or pan
  • grater
  • Spatula

Method
 

  1. Heat ghee in a pan and add the grated lauki.
  2. Cook on medium heat for 5 to 6 minutes until the raw smell goes away.
  3. Pour in the milk and cook until it reduces and the lauki softens.
  4. Add jaggery powder and keep stirring until it thickens and starts leaving the sides of the pan.
  5. Mix in the cardamom powder and turn off the heat.
  6. Transfer the mixture to a greased plate and spread it evenly.
  7. Garnish with nuts and let it cool completely before cutting into squares.

Notes

You can replace jaggery with sugar if needed. Make sure to squeeze the grated lauki slightly if it feels too watery.
