  • 2 cups Cauliflower florets cut into medium pieces
  • 1/4 cup Whole wheat flour
  • 2 tbsp Corn flour for crispness
  • 1/2 tsp Salt adjust to taste
  • 1/2 tsp Black pepper
  • 1/4 cup Water to make batter
  • 1 tbsp Oil for cooking sauce
  • 1 tbsp Ginger garlic paste
  • 1/4 cup Onions finely chopped
  • 1/4 cup Capsicum chopped
  • 2 tbsp Soy sauce low sodium preferred
  • 1 tbsp Tomato ketchup
  • 1 tsp Vinegar
  • 1 tsp Red chilli sauce optional

Equipment

  • Air fryer or non-stick pan
  • Mixing bowl
  • Kadhai

Method
 

  1. Blanch cauliflower in hot water for 3 minutes and drain.
  2. Mix whole wheat flour, corn flour, salt, pepper, and water to make a smooth batter.
  3. Dip cauliflower florets into the batter and air fry at 190°C for 12 to 15 minutes or shallow fry in a non-stick pan.
  4. Heat oil in kadhai. Add ginger garlic paste and sauté for 30 seconds.
  5. Add chopped onions and capsicum. Cook for 2 to 3 minutes on medium flame.
  6. Add soy sauce, ketchup, vinegar, and chilli sauce. Mix well.
  7. Toss in the air-fried cauliflower and coat it well with the sauce.
  8. Cook for 1 minute, switch off the flame, and serve hot.

Notes

For extra crispiness, add 1 tsp oil to the batter. You can also add spring onions for more flavour.
