Whole Wheat Noodles with Tomato and Basil

  • 150 g whole wheat noodles
  • 1 tbsp olive oil or any cooking oil
  • 4 nos ripe tomatoes finely chopped
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1/2 tsp red chilli flakes adjust to taste
  • 1/4 tsp black pepper powder
  • 1 tsp salt adjust as needed
  • 8-10 leaves fresh basil roughly torn

Method
 

  1. Boil the whole wheat noodles as per packet instructions. Drain and rinse with cold water to avoid sticking.
  2. Heat oil in a pan. Add garlic and sauté for a few seconds until fragrant.
  3. Add onions and cook until they turn soft and light golden.
  4. Add the chopped tomatoes and cook for 5-6 minutes until they soften and form a light sauce.
  5. Mix in chilli flakes, black pepper and salt. Cook for another minute.
  6. Add the boiled noodles and toss gently until they are coated with the tomato mixture.
  7. Turn off the heat and add fresh basil leaves. Toss lightly and serve warm.

Notes

You can add vegetables like capsicum, zucchini or spinach to increase fibre and nutrients. Use extra basil for a stronger aroma.
