White Sauce Pasta (Indian Style)

This healthy Indian-style white sauce pasta is made with whole wheat pasta, light milk sauce, vegetables and simple spices. Perfect for a quick, comforting meal.

  • 1 cup whole wheat pasta (penne or fusilli)
  • 1 tbsp butter you can use olive oil
  • 1 tbsp whole wheat flour or maida
  • 1.25 cups low-fat milk
  • 1 cup mixed vegetables (capsicum, sweet corn, carrots) finely chopped
  • 1/2 tsp black pepper
  • 1/2 tsp oregano
  • 1/2 tsp chilli flakes
  • 1/4 tsp salt adjust to taste
  • 2 tbsp grated cheese (optional) prefer low-fat

Method
 

  1. Boil the pasta until soft. Drain and keep aside.
  2. Heat butter in a pan. Add whole wheat flour and cook for 30 seconds on low flame.
  3. Slowly add milk while whisking to avoid lumps.
  4. Cook the sauce for 2 to 3 minutes until it thickens.
  5. Add vegetables and cook for 2 minutes.
  6. Season with salt, pepper, oregano and chilli flakes.
  7. Mix in cooked pasta and toss well so the sauce coats everything.
  8. Add cheese if using. Serve warm.

Notes

Use whole wheat pasta and low-fat milk to keep the recipe light. You can add spinach, mushrooms or beans for extra nutrition.
