  • 500 g boneless chicken cut into medium pieces
  • 1/2 cup curd thick
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chilli powder adjust to taste
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tbsp oil
  • 1 tbsp butter use small amount for a healthier version
  • 2 tomatoes roughly chopped
  • 8 cashews soaked
  • 1/2 cup milk low-fat
  • 1 tsp kasuri methi crushed
  • to taste salt

Method
 

  1. Mix curd, chilli powder, turmeric, garam masala, ginger-garlic paste, and salt. Add chicken and marinate for at least 30 minutes.
  2. Heat a pan with oil. Cook the marinated chicken on medium heat until the pieces turn white and lightly golden.
  3. Blend tomatoes and soaked cashews into a smooth paste.
  4. In the same pan, add butter. Pour the tomato-cashew paste and cook for 5–6 minutes until the raw smell goes away.
  5. Add milk and mix well. Let the gravy simmer for 3–4 minutes.
  6. Add the cooked chicken. Mix, cover, and simmer for 8–10 minutes on low heat.
  7. Finish with crushed kasuri methi. Adjust salt and serve warm.

Notes

For a healthier version, use low-fat milk and minimal butter. Marinating helps the chicken stay tender.
