  • 500 g Chicken (curry cut)
  • 2 tbsp Oil preferably mustard or sunflower
  • 2 cups Onions, finely chopped
  • 1 cup Tomatoes, pureed
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Turmeric powder
  • 2 tsp Coriander powder
  • 1 tsp Red chilli powder adjust to taste
  • 1 tsp Garam masala
  • 1.5 cups Water adjust for gravy consistency
  • 2 tbsp Fresh coriander, chopped
  • Salt to taste

Equipment

  • Heavy pan or kadhai
  • Spatula

Method
 

  1. Heat oil in a kadhai and add chopped onions. Cook until light golden.
  2. Add ginger-garlic paste and sauté for a minute until fragrant.
  3. Mix in turmeric, coriander powder, red chilli powder and salt. Stir well.
  4. Add tomato puree and cook until the masala releases oil.
  5. Add chicken pieces and mix so the masala coats them well.
  6. Pour water, cover and cook on medium heat for 20–25 minutes until the chicken turns soft.
  7. Sprinkle garam masala, simmer for 2 minutes and finish with fresh coriander.

Notes

For a healthier version, use less oil and add extra tomatoes for natural thickness. Works well with brown rice or multigrain roti.
