  • 1 cup rolled oats (ground into flour)
  • 1/2 cup fresh raspberries (lightly mashed) or frozen
  • 2 tbsp chia seeds
  • 3 tbsp honey or jaggery syrup
  • 2 tbsp coconut oil (melted)
  • 1/2 tsp vanilla essence
  • 1/4 tsp baking powder
  • 1 pinch salt

Method
 

  1. Preheat your oven to 170°C and line a baking tray with parchment paper.
  2. In a bowl, mix oat flour, chia seeds, baking powder and salt.
  3. Add melted coconut oil, honey and vanilla. Mix until it forms a soft dough.
  4. Fold in the mashed raspberries gently.
  5. Scoop small portions and flatten lightly on the baking tray.
  6. Bake for 12 to 15 minutes or until the edges turn golden.
  7. Let the cookies cool completely so they firm up well.

Notes

You can replace raspberries with strawberries or blueberries. Store in an airtight container for 4 to 5 days.
