- Preheat the oven to 170°C. Line a baking tray with parchment paper.
- In a mixing bowl, add softened butter and powdered keto sweetener. Beat until creamy.
- Add the egg and vanilla essence and mix well.
- Add almond flour and baking powder. Mix to form a soft dough.
- Fold in sugar-free chocolate chips.
- Scoop small portions and shape into cookies. Place them on the tray.
- Bake for 10 to 12 minutes until edges turn slightly golden.
- Let the cookies cool completely. They firm up as they cool.
Notes
Store the cookies in an airtight container for up to one week. Add a pinch of cinnamon for extra flavour.
