  • 1 cup Almond flour fine ground
  • 3 tbsp Butter softened
  • 1/3 cup Erythritol or any keto sweetener powdered
  • 1 Egg room temperature
  • 1/2 tsp Vanilla essence
  • 1/4 cup Sugar-free chocolate chips
  • 1/4 tsp Baking powder optional

Method
 

  1. Preheat the oven to 170°C. Line a baking tray with parchment paper.
  2. In a mixing bowl, add softened butter and powdered keto sweetener. Beat until creamy.
  3. Add the egg and vanilla essence and mix well.
  4. Add almond flour and baking powder. Mix to form a soft dough.
  5. Fold in sugar-free chocolate chips.
  6. Scoop small portions and shape into cookies. Place them on the tray.
  7. Bake for 10 to 12 minutes until edges turn slightly golden.
  8. Let the cookies cool completely. They firm up as they cool.

Notes

Store the cookies in an airtight container for up to one week. Add a pinch of cinnamon for extra flavour.
