  • 2 tbsp coconut flour
  • 1.5 tsp cinnamon powder
  • 4 tbsp butter softened
  • 4 tbsp erythritol or any keto sweetener
  • 1 egg room temperature
  • 1 tsp vanilla extract
  • 1/4 tsp baking powder

Method
 

  1. Preheat the oven to 170°C and line a baking tray with parchment paper.
  2. In a bowl, mix almond flour, coconut flour, cinnamon, baking powder, and erythritol.
  3. Add softened butter, egg, and vanilla. Mix well to form a soft dough.
  4. Fold in the crushed pecans.
  5. Make small balls from the dough, flatten them gently, and place on the tray.
  6. Bake for 10 to 12 minutes until edges turn golden. Cool completely before eating.

Notes

For a firmer cookie, chill the dough for 10 minutes before shaping. Store in an airtight container for up to 5 days.
