  • 1 cup Almond flour fine ground
  • 3 tbsp Unsalted butter softened
  • 1/3 cup Erythritol or any keto sweetener
  • 1 tsp Lemon zest freshly grated
  • 1 tbsp Lemon juice fresh
  • 1/2 tsp Baking powder
  • 1 tsp Vanilla essence
  • 1 pinch Salt

Method
 

  1. Preheat your oven to 170°C and line a baking tray with parchment paper.
  2. In a mixing bowl, whisk softened butter and erythritol until creamy.
  3. Add lemon zest, lemon juice, vanilla essence, and mix well.
  4. Add almond flour, baking powder, and salt. Mix to form a soft dough.
  5. Make small balls, flatten them gently, and place them on the baking tray.
  6. Bake for 10 to 12 minutes until the edges turn light golden.
  7. Let the cookies cool completely before serving. They firm up as they cool.

Notes

For a stronger lemon flavor, add a little extra zest. Store cookies in an airtight container for 5 to 6 days.
