Indian Vegetable Stir-Fry

  • 1 cup carrot slices
  • 1 cup capsicum slices mixed colours preferred
  • 1 cup beans (cut in 1-inch pieces)
  • 1/2 cup onion (sliced)
  • 1 cup broccoli florets
  • 1 tbsp oil olive or mustard
  • 1/2 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder adjust to taste
  • 1/2 tsp coriander powder
  • 1/2 tsp salt adjust to taste
  • 2 tbsp water optional for softer veggies

  • Kadhai

Method
 

  1. Heat oil in a kadhai on medium flame. Add cumin seeds and let them crackle.
  2. Add sliced onions and sauté for a minute until they turn light soft.
  3. Mix in ginger-garlic paste and cook for 30 seconds.
  4. Add carrots, beans and broccoli. Stir well and cook for 3 to 4 minutes.
  5. Add capsicum and sprinkle turmeric, chilli powder, coriander powder and salt.
  6. Stir-fry everything on medium-high flame for 4 to 5 minutes until veggies stay crisp yet cooked.
  7. Add 2 tbsp water if you prefer softer vegetables. Cook for 1 minute and turn off the flame.

Notes

You can add mushrooms, zucchini or paneer for extra protein. Keep the flame medium-high for best texture.
