  • 2 cups spinach (palak), chopped
  • 2 medium potatoes, peeled and cubed
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 medium onion, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 small tomato, chopped
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • to taste salt

  • kadai or pan

Method
 

  1. Heat oil in a kadai and add cumin seeds. Let them splutter.
  2. Add chopped onions and sauté till they turn light golden.
  3. Mix in ginger-garlic paste and cook for a minute until the raw smell goes.
  4. Add tomatoes and cook till soft.
  5. Add turmeric, coriander powder, red chili powder, and salt. Mix well.
  6. Add potato cubes and mix so they are coated with spices. Cook for 5 minutes.
  7. Add chopped spinach and mix gently. Cook on medium flame for 7 to 8 minutes till potatoes and spinach turn soft.
  8. Sprinkle garam masala, mix once, and turn off the flame.

Notes

For extra flavor, add 1 tsp kasuri methi at the end. Serve with roti or steamed rice.
