- Heat oil in a kadai and add cumin seeds. Let them splutter.
- Add chopped onions and sauté till they turn light golden.
- Mix in ginger-garlic paste and cook for a minute until the raw smell goes.
- Add tomatoes and cook till soft.
- Add turmeric, coriander powder, red chili powder, and salt. Mix well.
- Add potato cubes and mix so they are coated with spices. Cook for 5 minutes.
- Add chopped spinach and mix gently. Cook on medium flame for 7 to 8 minutes till potatoes and spinach turn soft.
- Sprinkle garam masala, mix once, and turn off the flame.
Notes
For extra flavor, add 1 tsp kasuri methi at the end. Serve with roti or steamed rice.
