  • 1 cup whole wheat macaroni uncooked
  • 1 tbsp olive oil
  • 1.5 tbsp whole wheat flour
  • 1.5 cup low-fat milk room temperature
  • 1/2 cup grated cheddar cheese low-fat if available
  • 1/4 tsp black pepper
  • 1/4 tsp red chilli flakes optional
  • 1/4 tsp salt adjust to taste
  • 2 tbsp grated mozzarella for topping

Method
 

  1. Boil the macaroni as per packet instructions until just soft. Drain and keep aside.
  2. Heat olive oil in a pan, add whole wheat flour, and whisk for 30 seconds on low flame.
  3. Slowly pour milk while whisking to avoid lumps. Cook for 3 to 4 minutes until it thickens.
  4. Add cheddar cheese, black pepper, salt, and chilli flakes. Mix until the cheese melts.
  5. Add boiled macaroni to the sauce and mix well.
  6. Transfer to a baking dish, sprinkle mozzarella, and bake at 180°C for 10 minutes until lightly golden.
  7. Serve hot with a side salad for a balanced meal.

Notes

Use whole wheat pasta for extra fibre. You can also add steamed vegetables like broccoli or spinach for more nutrition.
