  • 250 g salmon fillets boneless
  • 2 cups broccoli florets fresh or blanched
  • 1 tbsp olive oil
  • 1 tsp lemon juice fresh
  • 1 tsp garlic paste
  • 1/2 tsp red chilli powder adjust to taste
  • 1/2 tsp turmeric powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt adjust to taste

Method
 

  1. Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper.
  2. In a bowl, mix olive oil, garlic paste, lemon juice, red chilli powder, turmeric, pepper and salt.
  3. Coat the salmon fillets evenly with the marinade.
  4. Toss broccoli with a little salt and the leftover marinade.
  5. Place salmon and broccoli on the tray. Bake for 18–20 minutes until salmon is cooked and flakes easily.
  6. Serve hot with lemon on the side.

Notes

You can add sliced carrots or beans for extra fibre. Avoid overbaking to keep the salmon juicy.
