Baked Samosas with Spinach and Feta

  • 1 cup fresh spinach, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1 small onion, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala
  • 1 tbsp oil for sautéing
  • 8 whole wheat samosa sheets or phyllo sheets
  • 1 tbsp milk or oil for brushing

Method
 

  1. Heat oil in a pan and add cumin seeds. Once they crackle, add onion and sauté until soft.
  2. Add ginger-garlic paste and cook for a minute.
  3. Add spinach and cook until it wilts. Mix in chilli powder, garam masala, and salt to taste.
  4. Switch off heat and add crumbled feta. Let the filling cool.
  5. Preheat oven to 180°C. Grease a baking tray lightly.
  6. Place one samosa sheet on the counter. Add a spoonful of filling and fold into a triangle shape.
  7. Seal the edge with a little water. Repeat for all samosas.
  8. Place samosas on the tray, brush lightly with milk or oil, and bake for 20 to 25 minutes until crisp.

Notes

You can add finely chopped coriander for extra freshness. Serve with mint chutney for a light and healthy snack.
