  • 2 medium Ripe bananas well mashed
  • 1 cup Rolled oats
  • 2 tbsp Jaggery powder optional
  • 1 tsp Cinnamon powder optional
  • 2 tbsp Chopped almonds or walnuts
  • 1 tsp Vanilla essence

Equipment

  • Mixing bowl
  • Fork or masher
  • Baking Tray
  • Parchment paper
  • Oven or OTG

Method
 

  1. Mash the bananas in a mixing bowl until smooth.
  2. Add rolled oats, jaggery, cinnamon, nuts and vanilla. Mix well into a thick dough.
  3. Preheat your oven to 180°C. Line a baking tray with parchment paper.
  4. Scoop small portions and flatten them lightly into cookie shapes.
  5. Bake for 12 to 15 minutes until the edges look slightly golden.
  6. Cool completely and store in an airtight container.

Notes

You can add raisins, choco chips or seeds for extra flavour. These cookies stay fresh for 2 to 3 days at room temperature.
