Indian-Style Vegetarian French Toast (Eggless)

A quick, healthy and easy Indian vegetarian version of French toast, using custard powder or corn-starch instead of egg to give soft insides and crisp edges — perfect for breakfast or snack.

  • 4 slices Thick bread slices (whole wheat, multigrain or white) Preferably a day or two old, slightly firm
  • 1/2 cup Milk Dairy or plant-based (almond, oat, cashew)
  • 2 tbsp Custard powder (or corn-starch as substitute) If using corn-starch, add 1 tsp vanilla essence
  • 1 to 2 tsp Sugar Adjust to taste
  • 1/4 tsp Cinnamon powder (optional)
  • 1/2 tsp Butter or oil for frying Use plant-based butter or oil for vegan option

Method
 

  1. In a shallow bowl, whisk together milk, custard powder (or corn-starch), sugar and cinnamon until the mixture is smooth and lump-free.
  2. Heat a non-stick frying pan on medium flame and add about ½ tsp butter or oil to coat the surface.
  3. Dip one bread slice into the milk-custard mixture. Let it absorb just enough — do not soak it until soggy. Let excess drip off.
  4. Place the dipped bread slice on the hot pan. Cook on medium heat until the bottom turns golden brown (about 2–3 minutes).
  5. Flip the slice and cook the other side until golden brown and crisp. If needed, add a little more butter or oil for subsequent slices.
  6. Repeat with remaining slices. Serve the toasts warm, optionally drizzled with honey or maple syrup, or topped with fresh fruit.

Notes

Use slightly old, firm bread slices — fresh soft bread tends to become soggy. For a vegan version, choose plant-based milk and oil instead of butter. Serve immediately after cooking to keep the toast crisp outside and soft inside.
