Carrot & Tofu Fried Rice (Healthy Indian Style)

  • 1 cup (cooked) rice preferably cooled or leftover rice
  • 200 g firm tofu drained and cubed
  • 1 cup carrot (grated or finely chopped)
  • 1 tbsp vegetable oil or olive oil
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • ¼ tsp red chili powder (optional) for mild heat
  • ½ tsp salt (or to taste)
  • 2 tbsp soy sauce (or light soya sauce) optional — for added flavour
  • 2 tbsp chopped coriander (fresh) for garnish

Method
 

  1. Heat oil in a pan or wok over medium flame. Add cumin seeds and let them crackle for a few seconds.
  2. Add cubed firm tofu and sauté until light golden — about 4-5 minutes. Stir occasionally so all sides brown evenly.
  3. Add grated or chopped carrot to the pan. Stir and cook for 2–3 minutes until carrots soften slightly.
  4. Sprinkle turmeric powder, red chili powder (if using), and salt. Mix well so spices coat tofu and carrot.
  5. Add the cooked rice into the pan. Break any clumps gently using a spatula and combine with tofu-carrot mixture.
  6. Drizzle soy sauce (if using). Stir well and cook for another 2–3 minutes so rice heats evenly and all flavours blend.
  7. Turn off the heat, sprinkle chopped fresh coriander over the rice. Mix gently and serve hot.

Notes

You may use brown rice instead of white rice for extra fibre. Leftover rice works best to avoid mushiness. Optionally add peas or chopped capsicum for extra vegetables.
