  • 1 cup cucumber, peeled and chopped
  • 2 ripe kiwis, peeled and chopped
  • 1 tbsp lemon juice
  • 1 tsp honey or stevia (optional) adjust to taste
  • 1 cup chilled water adjust for consistency
  • mint leaves 4–5 leaves for flavour

  • Strainer (optional)
  • Knife

Method
 

  1. Add chopped cucumber, kiwi, lemon juice, honey and chilled water to a blender.
  2. Blend on high speed until smooth.
  3. Strain the drink if you prefer a smoother texture. This step is optional.
  4. Pour into glasses and garnish with mint leaves.
  5. Serve chilled immediately for best taste.

Notes

You can add a few ice cubes while blending for an even cooler summer drink. Use stevia if you want to keep the drink low-calorie.
