  • 2 medium potatoes boiled and cubed
  • 1 cup curd (dahi) whisked
  • 1 tbsp oil or ghee
  • 1/2 tsp cumin seeds
  • 1 tsp ginger grated
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp rock salt or normal salt adjust to taste
  • 1.5 cups water adjust for gravy
  • 1 tbsp fresh coriander chopped

Method
 

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add grated ginger and sauté for a few seconds.
  3. Mix in turmeric, coriander powder, and red chilli powder. Stir quickly.
  4. Add the boiled potato cubes and mix well so they get coated with the spices.
  5. Pour in water and let the mixture come to a boil.
  6. Lower the flame and slowly add whisked curd while stirring to avoid curdling.
  7. Cook for 3–4 minutes until the gravy thickens. Add salt and adjust consistency.
  8. Garnish with fresh coriander and serve hot.

Notes

Use fresh curd for best taste. Keep the flame low after adding curd to prevent curdling.
