Dahi Wale Lauki

  • 2 cups lauki (bottle gourd), peeled and diced fresh and tender
  • 1 cup curd (dahi), whisked use fresh curd
  • 1 tbsp besan (gram flour) prevents curd from splitting
  • 1 tbsp oil
  • 1/2 tsp cumin seeds
  • 1 green chilli, slit
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chilli powder
  • Salt to taste
  • 2 tbsp fresh coriander, chopped

Equipment

  • Kadai
  • Mixing bowl
  • Spatula

Method
 

  1. Heat oil in a kadai and add cumin seeds. Let them crackle.
  2. Add green chilli and diced lauki. Mix well.
  3. Add turmeric, coriander powder, red chilli powder and salt. Mix and cook for 2 minutes.
  4. Pour 1 cup water, cover and cook for 10–12 minutes until lauki becomes soft.
  5. In a bowl whisk curd with besan to avoid curdling.
  6. Lower the flame and slowly pour the curd mixture into the cooked lauki. Stir continuously.
  7. Cook on low heat for 5 minutes until gravy turns creamy.
  8. Finish with fresh coriander and switch off the flame.

Notes

Use fresh curd to avoid tangy taste. Adjust water depending on thickness you prefer.
