  • 2 pieces Eggs fresh
  • 1/2 medium Avocado ripe
  • 1 piece Whole wheat roti or chapati fresh
  • 1 tbsp Onion finely chopped
  • 1 tbsp Tomato finely chopped
  • 1 tbsp Coriander leaves chopped
  • 1/4 tsp Black pepper powder
  • 1/4 tsp Salt adjust to taste
  • 1 tsp Ghee or olive oil for cooking

  • Mixing bowl
  • Spatula

Method
 

  1. Crack the eggs into a bowl, add salt and pepper, and whisk well.
  2. Heat a pan, add ghee, and pour in the whisked eggs. Scramble gently until cooked.
  3. Mash the avocado in a small bowl and mix in onion, tomato, and coriander.
  4. Place the roti on a plate. Spread the avocado mix evenly.
  5. Add the scrambled eggs on top and roll the wrap tightly.
  6. Slice in half and serve warm.

Notes

You can add green chutney or a few spinach leaves for extra flavor and nutrients.
