  • 1 cup microgreens (mixed — e.g. broccoli, radish, sunflower) washed and trimmed
  • ½ cup grated carrot fresh
  • ¼ cup finely chopped capsicum (bell pepper) use any colour — red/green/yellow
  • 2 tbsp chopped onion
  • 2 tbsp chopped tomato
  • 1 tbsp chopped fresh coriander (cilantro)
  • 1 tbsp fresh lemon juice adjust to taste
  • 1 tbsp extra-virgin olive oil (or sesame oil) optional but gives nice flavour
  • ¼ tsp black salt (kala namak) or regular salt to taste
  • ¼ tsp chaat masala (optional) for Indian flavour

Method
 

  1. Take clean microgreens in a large bowl. If stems are long, trim them gently.
  2. Wash and pat-dry grated carrot, chopped capsicum, onion, tomato and coriander. Add them into the bowl with microgreens.
  3. In a small cup, mix lemon juice, olive oil (or sesame oil), salt and chaat masala (if using). Stir well to make a light dressing.
  4. Pour the dressing over the greens and vegetables. Toss gently so that everything is evenly coated.
  5. Taste and adjust salt or lemon juice if needed. Serve immediately for fresh crunch.

Notes

Use fresh microgreens only. Add dressing just before serving to keep crunch. You can also add nuts (like roasted peanuts or almonds) for extra protein.
