  • 75 g paneer crumbled or finely chopped
  • 2 slices whole wheat bread
  • 2 tbsp finely chopped capsicum
  • 2 tbsp finely chopped onion
  • 1 tbsp finely chopped coriander
  • 1/4 tsp red chilli powder
  • 1/4 tsp roasted jeera powder
  • 1/4 tsp black pepper powder
  • 1 tbsp hung curd acts as a healthy spread
  • 1/4 tsp salt adjust to taste
  • 1 tsp ghee or olive oil for grilling

Method
 

  1. In a mixing bowl, combine crumbled paneer, capsicum, onion, coriander, hung curd, red chilli powder, jeera powder, black pepper and salt. Mix well.
  2. Spread the paneer mixture evenly on one slice of bread. Cover with the second slice.
  3. Heat a grill pan and lightly brush it with ghee or olive oil.
  4. Place the sandwich on the hot pan and grill on medium heat for 2–3 minutes per side until crisp and golden.
  5. Cut and serve hot with mint chutney or tomato ketchup.

Notes

You can add spinach, grated carrot or beetroot to boost the nutrition. For a spicier version, mix in a little green chilli.
