  • 4 cups grated carrots fresh and tender
  • 1.5 cups milk low-fat or regular
  • 2 tbsp ghee
  • 4 tbsp jaggery powder adjust to taste
  • 2 tbsp chopped almonds
  • 1 tbsp raisins
  • 1/2 tsp cardamom powder

Method
 

  1. Heat ghee in a heavy-bottom pan on medium flame.
  2. Add grated carrots and sauté for 5 to 7 minutes till they soften.
  3. Pour in the milk and cook on medium flame. Stir in between so it doesn’t stick.
  4. Cook until the milk reduces completely and the carrots turn glossy.
  5. Add jaggery powder and mix well. Cook for 3 to 4 minutes.
  6. Stir in cardamom powder, almonds, and raisins. Cook for another minute and switch off the flame.
  7. Serve warm or chilled.

Notes

Use tender red carrots for the best taste. You can replace milk with almond milk for a dairy-free version. Reduce ghee slightly if you want an even lighter halwa.
