
Healthy Indian Chicken Curry

- Heat oil in a kadhai and add chopped onions. Cook until light golden.
- Add ginger-garlic paste and sauté for a minute until fragrant.
- Mix in turmeric, coriander powder, red chilli powder and salt. Stir well.
- Add tomato puree and cook until the masala releases oil.
- Add chicken pieces and mix so the masala coats them well.
- Pour water, cover and cook on medium heat for 20–25 minutes until the chicken turns soft.
- Sprinkle garam masala, simmer for 2 minutes and finish with fresh coriander.
Notes
For a healthier version, use less oil and add extra tomatoes for natural thickness. Works well with brown rice or multigrain roti.
