  • 2 slices whole wheat bread
  • 1/4 cup finely chopped capsicum any colour
  • 1/4 cup grated carrot
  • 1/4 cup finely chopped onion
  • 2 tbsp sweet corn (boiled)
  • 1 tbsp green chutney homemade preferred
  • 1 tbsp hung curd or low-fat mayo for creaminess
  • 1/4 tsp black pepper
  • 1/4 tsp chaat masala
  • 1 tsp butter or ghee for grilling

  • Grill pan or sandwich maker

Method
 

  1. Mix capsicum, carrot, onion, and corn in a bowl.
  2. Add green chutney, hung curd, pepper, and chaat masala. Combine well.
  3. Spread the mixture evenly on one slice of bread.
  4. Cover with the second bread slice and lightly spread butter on top.
  5. Heat a grill pan or sandwich maker. Place the sandwich and grill till crisp and golden.
  6. Cut and serve hot with chutney or ketchup.

Notes

You can add beetroot, cucumber, or paneer for extra nutrition. Using hung curd keeps the sandwich light and healthy.
