Healthy Indian Lauki (Bottle Gourd) Soup

  • 300 grams lauki (bottle gourd), peeled and chopped
  • 1 medium onion, chopped
  • 2 small tomatoes, chopped
  • 1 inch ginger, peeled and crushed
  • 2 cloves garlic, peeled and crushed
  • 1/4 tsp turmeric powder
  • 1 tbsp olive oil or light cooking oil
  • 2 cups water (or as needed)
  • 1 tbsp lemon juice (optional)
  • Salt and freshly ground black pepper to taste

Method
 

  1. Heat oil in a pressure cooker or heavy pot on medium flame.
  2. Add chopped onion, ginger, garlic and sauté for 1–2 minutes until onion becomes translucent.
  3. Add chopped lauki, tomatoes and turmeric powder. Stir well for another minute.
  4. Pour in about 2 cups of water and add salt. Close the pressure cooker and cook for 3–4 whistles. If using a pot, cover and simmer until lauki is soft (about 15–20 minutes).
  5. Once cooked, let the steam release naturally (if pressure cooked). Then open the lid and allow the mixture to cool slightly.
  6. Blend the mixture until smooth using a blender or hand-blender. Add more water if needed to adjust consistency.
  7. Return the soup to the pan, bring to a gentle boil on low flame. Add black pepper and lemon juice (if using). Adjust salt if needed.
  8. Pour into bowls and serve hot.

Notes

You may skip straining the soup to retain more fibre. For a richer flavour, add a pinch of roasted cumin powder or chopped coriander leaves before serving.
