
Healthy Indian Lauki (Bottle Gourd) Soup
A simple, light and nutritious Indian-style lauki soup. Low-calorie, high-water, high-fibre — perfect for weight management, digestion and a healthy meal any time.

- Heat oil in a pressure cooker or heavy pot on medium flame.
- Add chopped onion, ginger, garlic and sauté for 1–2 minutes until onion becomes translucent.
- Add chopped lauki, tomatoes and turmeric powder. Stir well for another minute.
- Pour in about 2 cups of water and add salt. Close the pressure cooker and cook for 3–4 whistles. If using a pot, cover and simmer until lauki is soft (about 15–20 minutes).
- Once cooked, let the steam release naturally (if pressure cooked). Then open the lid and allow the mixture to cool slightly.
- Blend the mixture until smooth using a blender or hand-blender. Add more water if needed to adjust consistency.
- Return the soup to the pan, bring to a gentle boil on low flame. Add black pepper and lemon juice (if using). Adjust salt if needed.
- Pour into bowls and serve hot.
Notes
You may skip straining the soup to retain more fibre. For a richer flavour, add a pinch of roasted cumin powder or chopped coriander leaves before serving.
