Healthy Veg Kathi Roll

  • 2 whole wheat rotis fresh or leftover
  • 1 cup mixed vegetables thinly sliced (capsicum, onion, carrot, cabbage)
  • 1 tbsp oil use minimal for healthier cooking
  • 1 tsp ginger garlic paste
  • 1/2 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1 tsp chaat masala
  • 2 tbsp curd for a light spread
  • 2 tbsp mint-coriander chutney
  • 4-6 slices cucumber and onion for crunch

Equipment

  • Tawa
  • Fry pan
  • Mixing bowl

Method
 

  1. Heat oil in a pan and sauté ginger garlic paste for a few seconds.
  2. Add the sliced vegetables and cook on medium flame for 3 to 4 minutes until slightly soft.
  3. Mix in red chilli powder, turmeric and salt. Cook for another minute.
  4. Spread curd and green chutney on each roti.
  5. Place the cooked vegetables in the center. Add cucumber, onion and sprinkle chaat masala.
  6. Roll it tightly and toast lightly on the tawa for 1 minute to set the shape.

Notes

You can add paneer or tofu for extra protein. Use multigrain rotis for added fiber.
