
Healthy Vegetable Sandwich
This healthy vegetable sandwich is a quick Indian breakfast or snack made with fresh veggies, soft bread, and light seasoning. Perfect for busy mornings and beginner cooks.

- Spread green chutney evenly on both slices of whole wheat bread.
- Place cucumber, tomato, grated carrot and chopped capsicum evenly on one slice.
- Sprinkle a little salt and black pepper over the vegetables.
- Close the sandwich with the second slice of bread.
- Lightly spread butter on the outer sides and toast on a tawa or sandwich toaster for 2 to 3 minutes until golden.
- Slice and serve warm.
Notes
You can add beetroot, lettuce or paneer for extra nutrition. Use multigrain bread for more fiber.
