  • 1 cup mixed vegetables (bell pepper, zucchini, carrot, onion, tomato) cut into bite-sized pieces
  • 1 tbsp olive oil for tossing vegetables
  • 0.5 tsp chaat masala or roasted cumin powder + salt + red-chilli flakes to taste
  • 1 tbsp fresh lemon juice
  • 0.25 tsp black pepper powder
  • fresh coriander leaves for garnish

Method
 

  1. Wash and chop all vegetables (bell pepper, zucchini, carrot, onion, tomato) into bite-sized pieces.
  2. Preheat a grill pan or non-stick griddle on medium heat and drizzle a little olive oil to prevent sticking.
  3. In a bowl, toss the chopped vegetables with olive oil, chaat masala (or spices as suggested), salt and black pepper so that every piece is lightly coated.
  4. Spread the vegetables on the hot grill pan in a single layer and grill for about 10–12 minutes, turning occasionally until vegetables are tender and slightly charred.
  5. Once grilled, transfer the vegetables into a serving bowl and let them cool slightly.
  6. Drizzle fresh lemon juice over the grilled vegetables and sprinkle a bit more chaat masala or black pepper if desired.
  7. Garnish with fresh coriander leaves and serve warm or at room temperature.

Notes

You can use any seasonal vegetables available at home. Grilling adds smoky flavour and retains fibre — ideal for a healthy diet. Adjust spices to your taste. Serve as a light side salad or with chapati or rice.
